We aren't casein free at the moment. Cassein is dairy products, milk, cheese,

etc. The proteins in cassein are very similar to the proteins in gluten and

therefore supposedly cause the same problems.

We had tested last year for Celiac disease. He came up negative so we

waited about a year to try the diet. I'm really glad I did.

Well, here's the one I use. I got it off another list, and unfortunately

can't credit the original author, as I don't have the header of the email.

She said her husband adapted it to work in a bread machine, and that's what

I use, so it's a bread machine recipe.

2 cups GF flour (see below)

3 Tbsp sugar

2 tsp xanthan gum (I use guar gum)

1 tsp salt

1 cup milk, warmed for 1 min. in microwave

2 Tbsp oil (or use butter, just barely melted in the microwave)

2 eggs

1 tsp vinegar

Put these ingredients into your breadmaker in whatever order it requires

them and bake like any other white loaf.

GF flour mix

2 parts white rice flour

2/3 part potato starch flour (not potato flour)

1/3 part tapioca flour

Here's what I use: 1-1/3 cups white rice flour

1/2 cup potato starch

1/4 cup tapioca flour

I end up using slightly more than 1 cup milk, and slightly more than the 2

tsp guar gum (I slightly round each tsp). I think it would work better with

just one rising, but my machine is not programmable. I does fall a little

when the baking starts, but the texture is great.

I also use the dough cycle, then after the first rise I spoon the dough into

pot pie tins for hamburger buns, and regular size muffin tins for dinner

rolls.

I will have to look into this more. We had allergy testing on Matt when

he was not yet walking, (around age 15 months), and he was allergic to

milk. Before that, we knew that he was lactose intollerant. (regular

formula produced killer gas in a 5 lb baby-I'm sure you heard the

headlines in 1990!) So the allergist suggested that we keep him off of

milk until age 3. We pretty much followed his advice, then introduced

milk. We noticed that Matt still was lactose intollerant, and still is,

as the higher fat stuff really produces excess gas. He can drink one

glass of skim milk a day with out much problem, but if he gets into the

2%, watch out. Same for ice cream. The funny thing is that he really

doesn't like much in the way of milk products. Except vanilla ice cream,

which he usually loves. As long as it is the cheap stuff, not anything

like " Graeters " (Great ice cream from Cincinnati) " Ben and Jerry's " or

any of the premium ice creams, he is ok. Fine with me. Pizza doesn't seem

to do anything to him, (From the cheese), and he really doesn't eat any

other cheese. I'm still thinking about going gluten free. I have to

think a long time. (Or else I think slowly-- Probably the case)

This is for a bread machine, and a 1 pound loaf (1.5 pound in parenthesis):

2 (3) cups flour mix - see below

3 (4.5) Tbsp sugar

2 (3) tsp xanthum gum (I use guar gum)

1 (1.5) tsp salt

1.5 (2.25) tsp yeast

1 (1.5) cup(s) milk, warmed in the microwave 1 minute

2 (3) Tbsp. Oil

2 (3) eggs

1 (1.5) tsp vinegar.

Put these ingredients into your breadmaker in whatever order it requires and

bake like any other white loaf.

Flour mix:

2 parts white rice flour

2/3 part potato starch flour (NOT potato flour)

1/3 part tapioca flour

for 1 pound loaf, the measurements are:

1-1/3 cup white rice flour

1/2 cup potato starch flour

1/4 cup tapioca flour

for 1.5 pound loaf:

2 cups white rice flour

2/3 cup potato starch flour'

1/3 cup tapioca flour

IMPORTANT NOTE:

The most important thing is to mix the dry ingredients (except for the yeast)

well in a separate bowl before you add them to the bread machine. Then add the

yeast on top of everything.

I substitute it a lot for buttermilk.  I used 2 cups yesterday in bran muffin

tops.
