I'm starting a low carb program again and I don't want to give up my milk kefir!!! " My understanding as a nutritionist, is that regular milk has 12 grams carb to an 8 ounce glass but mature kefir (full ferment) has only 4 grams because the ferment knocks down the sugars by two thirds. 'Controlled carbs' are all the go now - eg. completely wholegrain bread with no white flour, so you are getting only complex carbs and no damaging simple carbs. Do you make that Stateside? We can also get wholegrain bread from the German Aldi supermarket chain - but I guess you may not have that Stateside?
