The kids will only drink so many glasses a day, willingly. ) So first I made instant vanilla pudding with 3 cups of kefir. The kids said it was lemon pudding, they didn't know I made it with kefir. I knew what I made but admittedly the kefir does have a twang. Good thing we like lemon. Then I got to wondering how to make that cheesecake pie I have been reading about. So for those of you who have been reading about the kefir cheesecake pie and trying to figure out exactly how to get the kefir/gelatin thing going, here's what I did. Some of us just need a recipe. If you have a favorite, please share. Pina Colada Kefir Pie 1 sm pkg coconut pudding 1 sm pkg pineapple jello 1 8 oz. tub of whipped topping 2 1/2 cups kefir Keebler Shortbread Ready Crust Place remaining cups of kefir in bowl and mix with pudding. Next heat 1/2 cup kefir (I used microwave for 30 seconds in glass measuring cup) then mix with jello. Let cool (took less than minute). Pour jello mixture into pudding mixture, mix. Add about 1/3 tub of slightly thawed whipped topping, mix well. Pour into pie crust and place in frig for several hours or overnight. YUMMY!!!! Notes: I used a hand mixer for all of it. I used full sugar puddings & jello. But if you are comfortable with the sugar free variety, I don't see why you couldn't use that. You can substitute any combination of things for a variety of pies. In fact I have some peach jello waiting for the next one. I will call that Peaches & Cream Kefir Pie. Just remember it will be tart all by itself, so work with it. You could probably whip up your own whipped topping from some kefir but I wasn't that adventurous and wanted a fluffy pie that would look good to my non-kefir drinking hubby. ) **************Get trade secrets for amazing burgers.
