I never torque down the lid so that " fizz " is created. I know some people like fizzy kefir, but I'm not sure making anaerobically is good for the kefir grains. Not that it damages them that much but I want the best environment for my little pets. And I don't want alcohol either. The " no-alcohol-at-all " during pregnancy thing is overkill in general --- a couple of glasses of wine a week is certainly fine for most people, and kefir's got a lot less in it.
