Hi Jazz,

That depends on what you mean by done. It has a lot of alcohol by now

if you don't remember when you put it in. Give a sip and if it is too

strong, make vinegar with it and try again. Remember, with water kefir

there is no need to throw anything out. This next batch keep tabs on

it. Taste test every day. Strain your kefir grains before it gets too

tart. It's done when you like the way it tastes.

Having read, somewhere else, about water and juice kefir, I decided to do some experimentation.

I love apple cider. So, I took some of my goat's milk grains (nicely washed) and stuck them in a jar with:

apple cider

lemon juice (fresh)

currants

peach slices

honey

Unfortunately I've lost track of the days since I started this (bad scientist - no cookie).

How will I know when it is done?

Should the first batch be drinkable - or should it be waste as the grains are just converting?

Ok Marilyn,

Will the grains multiply in the juice the same way that they will in the milk?

And, how do I make vinegar?
