GO FISH!

The fish I ate when I was a kid were all deep

fried. And I've got to tell you, I was more into the

crust that coated the fish than I was the taste of

the fish itself. And oh yeah, I have to add, a few

tablespoons of tarter sauce made any type of

fish...taste delicious! (Did I even need to tell you

that? LOL!)

Fish is also easy to

prepare and doesn't take very long to cook.

Yep, fried fish was what I grew up on. In fact, I

didn't really experience fish that wasn't fried until

I moved here to Los Angeles. This city has a lot of

restaurants that specialize in fish so I was able to

end up really enjoying the taste of my fish...without

it being deep-fried.

Fish is a rich source of protein and

good-for-your-heart omega-3's. Fish is also easy to

prepare and doesn't take very long to cook. After I'd

dined at a number of restaurants that featured fish, I

got into the habit of preparing my own fish dishes at

home.

I like using a variety of white fish, spread a little

Dijon mustard on each side, lightly dust it with bread

crumbs then bake my fish. So simple but oh, so good!

(The Dijon mustard really brings out the flavor of the

fish.)

I also like to steam some white fish. First, I let

the fish marinate in a little light soy sauce, garlic

and ginger. I then place the filets in the steamer

and in just a few minutes, viola...they're done!

Here's another way I like to prepare fish. I'll

lightly brown filets of talipia or halibut. Then I

make my own special sauce using I Can't

Believe It's Not Butter, lemon juice and

freshly ground black pepper. Oh, it's so good!

Have some fun, experiment

with different spices on your fish recipes and,

believe me, you'll begin enjoying the true

flavor of

fish, just as much as I do.

for me, I try to have a meal featuring fish at least

twice a week. And, as long as we're talking about

fish, let's not forget America's favorite canned fish..tuna!

Tuna salad is one of

my faves. I make it with diced celery, green onions,

radishes, sweet pickle relish and mix it with a little

low-fat mayo. (It's a lower-fat version of the tuna

salad my mother made for my lunch back home in New

Orleans.) Thank You, my sweet Shirley, for writing so

many of your recipes down for me! .

So, you want a great-tasting, low-fat, good-for-you

dinner for you and your family? Then, I say...GO

FISH!
