Guest guest Posted April 10, 2011 Report Share Posted April 10, 2011 Yesterday’s Meals: 6am bowl: 2 scrambled eggs, 1 spoonful of pork & veggie mixture (not hungry, felt full after eating, not pleased with taste or texture of the food) 11am Bowl: pork, tomatoes, cheese on lettuce (I really liked the crisp shredded lettuce under the hot mixture, will do this more often) 7pm Bowl: Buttermilk chicken (two bowls) (Wonderful new taste) 8pm bowl: strawberries and coconut cream (heavenly) Liquids: coffee with half and half (noted that coffee actually tastes better with half and half than with heavy cream) 2/3 gallon lemon water with tamarind 2 glasses of wine I was a busy cook yesterday! Recipe I tried: http://www.foodnetwork.com/recipes/nigella-lawson/buttermilk-roast-chicken-recipe/index.html There were the innards inside the chicken, so I sautéed them in butter and sea salt, added chicken broth, chives and cracked pepper to make a nice broth both for me and for a sauce base later in the week. I then put the single pork chop in the last of the Kalbi marinade I had from Hawaii. I am trying to use up foods and ingredients that I know my husband won't use while I am gone. I am doing pretty good with it. I cleaned out the freezer and there is only a few items left that I can cook up next week. With the remaining cans of beans and corn, I will make my husband a bean salad, I made that for him in the summer time when we use to grill. I made up a big batch of mixed spices for my husband for the truck to season his potatoes. I surveyed the fridge once more, I think everything is in order, so I know what to get for groceries this week as I made out daily menus. Here are photo's of the chicken: 2 cups of buttermilk, 1T of sea salt, 1tsp cumin, 1T maple syrup (I used sugar free). Marinated for the afternoon, baked at 325 for 1 hour with the lid on, then 1/2 hour with the lid off, another half hour with the chicken flipped over to brown skin. This is after I syphoned off the liquid. The sauce was fabulous! I did not thicken it, as I liked it just the way it was. It was a very unusual taste, nearly like a faint curry, the maple syrup gave it an unusual aroma. I really liked it though and the chicken was so moist and tender. This was so good, I had two bowls of it with a scoop of sauce on each. Husband will be home in the early morning tomorrow, so today is filled with cleaning and grocery shopping. I had my last day of do-nothing and had a marathon of Twin Peaks and knitting the entire day until 11pm. I really enjoyed that. My BG was 98 this morning, even after the late evening strawberries and coconut cream. I did open a bottle of wine last night and it was not at all enjoyable. I will have wine with my husband while he is home, but it will be the good stuff we have, the one I really like, but I think that my drinking days are going to be dwindling naturally, as i just don't like feeling off kilter or tired. After the second glass last night, I regretted it, I felt slightly headachy. I yearn for the refreshed feeling. Still not there yet. As promised I did take a photograph on the scale: This means I am really down a pound from yesterday, as my camera weighs exactly 1 pound. My goal for Hawaii was 219, I am a freaking 23 pounds over that goal and I could just plop down and cry over it. My husband says to just keep working it, and I will, of course.
