Guest guest Posted January 3, 2011 Report Share Posted January 3, 2011 I know, I am getting pretty posty these days, but I have really missed being able to communicate when I was internet deprived in December. lol. After reading through the Ketogenic Mediterranean Diet I thought about how I can improve what I am eating. I thought about how when I am at home, I cook with olive oil and use it in my homemade dressings, but on the road, my consumption is way down. I use it to roast husband’s daily potatoes in the lunchbox oven, but that just doesn’t happen to be a food I eat. So I sat there with my summer sausage and tried to think of how to add more oil. I cubed the meat, added cucumber and grape tomatoes and a hard boiled egg in my little sunshine bowl, drizzled it with olive oil and lemon juice. It was really good. I will be doing more of this. It will help increase my calories a bit too as I am sitting on about 900 a day, the oil will up that. Another idea I had was about adding olive oil to other foods. I have really missed tuna in oil. Every since they switched the oil to water in tinned tuna, I have practically given up on tuna. I hate the dry watery taste and went with sardines and mackerel. So there is another place I can add it. Our Sams Club stopped carrying the bleu cheese dressing we always bought so that I had been making a simple oil and balsamic dressing for our salads. I had forgotten how delicious that was. I think the next time we are at Walmart for a grocery run, I will get some vinegar and add dressing to my lunch or dinner meal.
