Guest guest Posted November 8, 2010 Report Share Posted November 8, 2010 We are now in TX and parked at a truckstop that had Soulman BBQ restaurant next door, that my husband had seen several times and wanted to try. We went for both lunch and dinner. For lunch I had a chopped beef (he cut a piece of smoked beef into a chopper right there at the counter, and then your could chose two side which were in a buffet style counter and add your own amount of BBQ sauce, which I tried a tiny drizzle of, it was thin and very dark and not overly sweet. I chose the cabbage and the green beans for my sides. The green beans were canned and tasted of nothing. The cabbage was wonderful it was cooked up with bacon and seasonings and was in a broth like liquid. YUM. The meat was put on a bun, which I tossed. For dinner I chose the 1/4 chicken, the cabbage and a few pieces of fried okra. My meals were all good, but my husband wasn’t as pleased. He is a potato aficionado and the mashed potatoes he scooped up were made from dried flakes and not fresh potatoes. I keep telling him that American restaurants generally rely on instant and processed foods, so even in a place that roasts meats in a smoker will rely on canned veggies and instant potatoes. I can usually tell when I see buffet foods which are made from fresh foods and which are not….I need to tell my husband as I see it to help him avoid what I know he will not like. Click to enlarge. The calories ended up being fine for me and on plan, the carbs were a bit too high and it showed with a spike in BG. Even a 4 hour reading I was at 112. This morning, at 98. Restaurant food will do that to me. While it is sorely needed to do “something†fun while on the road for so long, we are generally disappointed in most of the restaurants that we try. There were a few that made fabulous burritos from scratch (even the beans) but I cannot eat those foods anymore. We go out to eat less often at this point. Right now we are delivering our hazmat load. Then when that is done we will wait for our next load which will take us to home-time. We are about 2-3 days drive away, depending on how long we have to wait to pick up the load and when it actually delivers.
