More and more studies are coming out saying that it's the fat and NOT carbs that matter in the diet of diabetics. And by "carbs" I'm referring to healthy ones, like brown rice and whole grains. Of course simple carbs like sugar and white flour still matter. Those should be avoided by everyone, not just diabetics. The main doctor pushing it right now is Neal Barnard, MD. Here's the page for his book: http://www.nealbarnard.org/diabetes_book.htm the "intro" page to his program, including lectures, scientific reports, and links to recipes: http://www.nealbarnard.org/diabetes_tour.htm Dr. McDougall has also done a lot of writing about his food program and diabetes: http://www.drmcdougall.com/med_hot_diabetes.html Both these guys are LOW fat strict vegetarian and starch based food plans. Do a search on the McDougall forums for diabetes and you'll find dozens of people who have had their blood sugars return to normal by eliminating fat from their diets and eating healthy starches. http://www.drmcdougall.com/forums/index.php Many people on the McDougall forums tried Atkins first and found they had better diabetes control eating low fat vegan, instead.
