I made the best of it. I had to bake it first in the lunchbox oven, then later for dinner, I scooped it out, added seasoning and butter and heated it all up in the microwave. It was good. Now that we have more cooking options, I may attempt something a bit more interesting for our Thanksgiving dinner than we had at the truck stop restaurant last year. It’ll depend on our load at the time and the availability of a Walmart where ever we are at the time. I will get a jar of red cabbage, a jar of sauce before we have the next run. Perhaps I can cook the potatoes before hand and mash and reheat in the microwave. Then I can cook perhaps a small turkey roll or get a rotisserie chicken at Walmart. we always have apples on the truck, so perhaps I can make a baked apple for dessert beforehand and warm in the microwave.
