[The Little Bowl] Chicken Dinner

Yesterday we stopped at a Walmart. We needed Blood Glucose testing strips and a couple of fresh groceries. We bought grape tomatoes (because they last the longest), apples and bread for husband, liverwurst for me and we each bought a container of nuts. His is mixed, mine, cashews. Then we picked up a rotisserie chicken for dinner. I know they inject these chicken with solutions, but to have any kind of meat while on the truck is so nice and we have to go with what works and what is available. A cooked chicken like this means I can pull it all off the bones and heat it up in the microwave and eat it all in one sitting. It’s a higher calorie count for us, but worth it. My day’s calories totaled 1695 with the chicken and cashews and I did have 4 oz of salami at lunch. So dinner was a delightful 1/2 chicken, 1/2 can of green beans and a toss of cashews on top. It was so good and I felt stuffed afterwards. I got the dark meat and skin, husband took the white meat. He had potatoes and carrots with his chicken. Husband continues to monitor his BG before and 2 hours after every meal. I am testing only in the morning and before bed. My carbs are so low that I am staying mostly in the 80-90 range, with a few bump ups to 105ish. Husband is staying pretty steady in all his readings, usually about 110-119 at most readings, a few bumps to 130 or 140. His carbs are about 300 a day, they are not getting as reduced as I would like to see, he just can’t give up his bread and potatoes or candy. It’s not going to change unless his numbers get higher. I am glad he is tracking though, it helps us both know where we are at. we will continue to test whenever we eat something different than our normal fare. Besides the carbs, so far the differences between our eating (and we are both trying to lose weight) is that he continues to munch on his can of mixed nuts, I save mine to add to a meal, he eats sugar free candy in the evening, I have not yet opened my bag of candy, it is green tea candy made with real sugar, not corn syrup. When I have it, it is just one in the evening while I read. Still, I have not opened the bag. There just just isn’t anything to compare, we lose weight differently, we know our own bodies, our own weaknesses and strengths. All I can do is work it. And work it is what I will do. I am stiff! Wow, three months off the truck and being able to move around, walk and swim have really made sitting still for 12 hours and then lay on my bunk for 12 hours show up in my hips and lower back. I am getting out of the truck like a true trucker, bent in an L shape and struggling to straighten up. It’s good that I will be able to shave off a year of this trucking life for my husband, and 2 years for me. Our bodies won’t tolerate too many more years of this! Speaking of bodies, I have been checking out the full length mirrors in the restrooms. I do believe I see a thinner profile. Whenever the next shower day comes, I will take some body pictures and a scale photo too. Today we are in Texas. Mom and I used to get the lemon pepper rotisserie chickens from Walmart (it was the only cooked chicken they do right, the fried chicken can be used as a demolition ball) and it's pretty good, cooked that way the calories aren't that bad and you shave fat when you peel off the skin. I would make chicken sandwiches out of the leftovers.

Yep on the lemon chicken, that is what we had and it definitely better than a few we have had before. LOL, though on the skin...that is my favourite part and definitely encouraged on low carb. I actually need the fat. I am always looking for ways to add more fat to my diet.
