Do you remember when you were a kid and had your very own lunch box to take with you to school everyday? Was it a Roy lunch box...like mine? And oh, I can still remember the lunches my dad packed for me. He put such care into them. (What a dear dad he was!) And I'm telling you, my father made the best sandwiches in the world. There were no bologna and American cheese slices on the sandwiches he put in my Roy lunch box. No siree...Roy! My dad would make me something really tasty, like a crab cake sandwich on French bread topped with homemade tarter sauce! (Mmmm, I can still taste it!) They were so good, I'm sure I could have sold those incredible sandwiches of his in the school cafeteria. (Buy hey, I wasn't about to part with them!) Well, as we all got older, we put our lunch boxes away when we began our chosen careers. And I'm sure you can vouch for the fact that once you began working, time became so-o-o important. I'd say the majority of Americans have their lunches at a restaurant near where they work. Or they call and have something delivered to the office. People who live like this, eating or ordering lunch out everyday are spending a lot of money. And, most probably, they're also consuming a lot of extra calories and fat grams right along with those costly lunches. Well, may I make a suggestion? Why not get your lunch boxes out again. That's right, you need to go back to packing your own lunch for work. And no, I don't even want to hear it. I don't want to hear any of the excuses for why you "don't have time" to make your lunch before leaving for work. I mean, how long does it take, really? We're talking five or ten minutes to make yourself a sandwich and a healthy salad of sliced fruit. You can take some Laughing Cow cheese wedges, crackers and an apple to work with you. Or how's about a whole wheat pita stuffed with lettuce, tomatoes, chicken breast and a little fat-free salad dressing? You could pack something left over from dinner the night before. Maybe some steamed vegetables and a piece of salmon or meat loaf? And don't be afraid to get creative. Just remember to keep it healthy. I look forward to all of my meals and prepare them with care. I plan my meals ahead of time and all of that planning helps me stay on program. For instance, I know what I'm having for dinner tonight and, in fact, I have my meals planned for the entire weekend. By the time lunch hour rolls around, it's time to give your body some nourishment. Remember, by the time lunch hour rolls around, it's time to give your body some nourishment. I mean, you had breakfast, hours earlier and by noon, your body needs that nutritional boost. But it doesn't need a plate of nachos supreme or a thick slice of pizza with cheese stuffed into the crust! When you eat a heavy lunch like that, you return to work feeling heavy, too full and not to mention sluggish. But by having a nice, light salad for lunch instead, you feel light enough to dance around the office! ( And hey, I want you dancing around your office! LOL.) Now, since you probably don't have that old lunch box from your school days, I say head to Target or Walmart to pick up a new one for yourself this weekend.
