It's a really interesting vegetable. In fact, when it comes to vegetables, I've never seen anything like it. It sort of reminds you of a melon, only it's a lot longer and has a beautiful golden yellow color. You can find spaghetti squah in most supermarkets but if you don't see it where you shop, ask the market's produce manager about it. I want to share this great way I make spaghetti squash with you. I really think you'll like it. First, you cut the squash lengthwise and in half. Now you have to be a little patient because it's not the easiest vegetable in the world to cut. But believe me, it'll be well worth the extra effort you put into it. Once you've cut it, you should take a spoon and remove the seeds from the squash. They'll remind you of pumpkin seeds but you don't want them in the squash as you prepare to cook it. After you've finished scooping out the seeds, you'll want to get a casserole dish and place some water in the dish, just enough to cover the bottom. Then place the squash in the microwave, "face down," (that being the skin side up). Now set your timer for about 15-18 minutes. After that cooking time, you'll want to remove the squash from your microwave and let it sit for a little while until it cools. (By the way, spaghetti squash takes a long time to cook in the regular oven. That's why I give it so much time in the microwave.) Now, when you take a spoon and begin removing the squash, just wait. You're going to be truly amazed at the texture. I'm telling you, it'll look just like beautiful golden strands of spaghetti. (Now you know how it gets it's name.) Spaghetti squash is such a versatile vegetable, too. Once you remove the meat of the squash from its skin, you really can serve it just like you might regular spaghetti. For instance, you can top it with a marinara sauce and serve it like spaghetti. You won't believe the taste. So good! You can also add other ingredients to your spaghetti squash such as tomatoes, fresh parsley, or even another variety of squash. Be creative. You can top it with those other ingredients you've added and bake it for an additional 15 minutes at 350 degrees in your regular oven. Like I said, it's really a very versatile vegetable. And what I like best about it is how nicely it really marries the flavors of the other ingredients you add to it. If you're using my Foodmover, a serving of spaghetti squash equals one half-cup. If you haven't tried spaghetti squash before, I really hope you'll give it a try. I'm sure that, like me, you'll end up falling in love with it! So, next time you're at the supermarket, pick some up. And when you get home, you can have a delicious homecooked dish starring one of my favorite vegetables...spaghetti squash for dinner tonight!
