We got a load to Laredo, TX and so we expected another load from Laredo to Dallas and then we could get the last load to Colorado. We need to be home by the 5th, as we have company from Denmark arriving. So I plotted out our meals to get to the 5th and we didn’t have enough fresh foods. So we decided we’d stop in Louisiana. Then they told us to bring this load to Dallas…and that immediately cuts off lots of days and we can be in Dallas tomorrow afternoon. Husband gets his physical for driving and takes whatever class they have going, the truck gets a once over and any repairs or maintenance, while I sit in a LOUD and obnoxious drivers lounge all day. So I moved to plan B and since the cooler cannot be on at the Yard, we either eat what we can or toss it. We are very careful to keep it down to the minimum. Still, it’s two days to Colorado, and we do need to eat. It’s all so tricky. We bought the minimum, stocked up on some Cajun seasonings and just as we were almost done, I saw blackberries! I remembered they were low carb (for fruit) and I grabbed them. I also has spent the morning trying to figure out how to eat at the yard, and of course the canteen only serves burritos, a carb bomb for me. No beans, just meat and veggies and a fab green salsa: The calories are fine, its those pesky carbs in the tortilla. I refuse to give up how I feel these days, so I bought a small summer sausage and a couple of green peppers for my lunch. Husband can eat from the canteen, I tried explaining why I couldn’t eat burritos, but he doesn’t understand the carb thing at all. I will, however have the egg foo yong in the evening…perhaps we’ll be there no more than 2 days and it won’t do too much damage fluid-retention wise, but carb wise, it will be fine. This restaurant serves them with lots of veggies and not the thick goopy sauce. Here is a previous dinner from that restaurant: My dinner tonight: I enjoyed every single bite! Oh, and those silly bermuda pants that were too big this time (when the last time I tried them and they were too tight)? Today, I nearly lost them down around my ankles! LOL. I was lucky and grabbed them in time and when I got back to the truck, I whipped out my sewing box and put in 4 solid darts around the waist and now they fit perfectly and SNUGGLY. I am still having trouble with baggy clothes, I keep thinking I need to wear them.
