Wednesday, 13 January 2010 Yesterday, I asked you all to watch those visits to fast food places and restaurants. I also mentioned that when I got home from my New York City trip, after a little work in the office, I was going into my kitchen to prepare a healthy dinner for myself. And boy, did I ever! Last night, I went into the kitchen to prepare my dinner. I took out a can of whole tomatoes and put them into the blender for a few moments to make a smooth tomato sauce. Canned tomatoes are so sweet and they're the perfect beginning for a tasty sauce.I then took out a large pan and added one-and-a-half teaspoons of olive oil. To the oil, I added and sauteed some crushed garlic, a half-cup of finely chopped onion and some shredded carrots. I slowly sauteed all of those ingredients until I could really smell the aroma of the garlic.I then added the tomato sauce I'd prepared in the blender. I turned the fire down very low and let the sauce simmer for about 15 minutes. As the sauce was simmering, I added fresh chopped basil and parsley. (Now remember, the important thing is to let the sauce slowly cook down so you end up with a thicker sauce.) I steamed a few chicken breasts, cut them into cubes and added them to the sauce for just a few more minutes. I also cooked a pot of linguini and hey, my dinner was pretty much done.While the chicken was steaming, I made myself a little salad with romaine lettuce, cherry tomatoes, chopped celery, sliced cucumbers and some artichoke hearts that I'd quartered. I then made a simple oil and vinegar dressing with lemon juice for my salad.And oh what a nice healthy dinner I had...low in salt, fat and sugar. And the entire dinner took me just a little over 20 minutes to prepare. (Now that's not bad, huh?) And ya' know, you really couldn't find this meal in any restaurant the way you personally make it...at home! And you know what else? Because I made this meal myself, I enjoyed it even more. There're a lot of these quick and easy dinners you can make for yourself that will keep you out of trouble and help get your body into better shape. Maybe you own one of my cookbooks or one from many other chefs around the world. Look through some of them and try some dishes that sound good to you. And one other thing, don't be afraid to tweak the ingredients a little so you can make them healthier for you. Tonight, in my microwave pressure cooker, I'm making turkey stroganoff with strips of turkey, mushrooms, onions, chicken broth, and a dab of fat free sour cream.I've told you what I'm cooking.
