Guest guest Posted February 22, 2010 Report Share Posted February 22, 2010 How about this one Mexican Shrimp Cocktail. This is a meal by the way. About 8 oz protein more or less what ever you like. About 1/2 cup veggies and if you are counting the oil in Avocado about a tablespoon. I will describe what I have made for one serving. Served in a Beer mug. About 8 ounces of shrimp cooked with out shell. Big or little what ever you like. Tiger shrimp about thumb sized are the best though. About 1/4 cup diced onion About 1/4 cup diced cuecumber about 1/4 cup cubed Avocado Two tablespoons minced Cilantro If you like spicy then seed and dice up one Cerrano Chile. This little guy can kick some butt Now and later but oh its soo tasty and worth it...;] Salt pepper garlic what ever kind you like. Juice from half a lime (to taste really) toss gently together then spoon into the beer mug. Then top off with either spicy Clamato or Clamato or Tomato Juice and clam juice together. If you like a more traditional heat use some tabasco and a little Celery seed. Eat with crackers,Tortillas or Sour Dough bread or just spoon it up without any Carbs added to it.
