TOP 'O THE MORNIIN' TO YA'!

Wednesday, 17 March 2010

Happy St. 's Day to one and all! Hey, did you know that I was Irish? Yep, my father was half-Irish and every St. 's Day, he would prepare a fabulous meal for our family.

He bought the corned beef fresh and cooked it in a pressure cooker so it'd get nice and tender. He'd add his own special blend of spices and oh, was the flavor ever incredible!

My dad would also buy some small white potatoes, carrots and cabbage to complete what can only be described as a corned beef & cabbage vegetable extravaganza! He'd bake fresh rolls and to complete the meal, we had to have a green dessert, of course. And, you guessed it, he'd make a scrumptious key lime pie!Back then, we drank milk at dinner. And on St. 's Day, my father would add a drop of green food coloring to our milk. (He was so cute!)

Also on St. 's Day, we all spent the day dressed as leprechauns. Lenny and I went to school dressed as leprechauns. My mother did her grocery shopping dressed as a leprechaun and, okay, wait...I'm making all that up. LOL!But my father would talk about how when he was a kid, a leprechaun had appeared to him. His stories always intrigued my brother and I. And every year, he'd tell us more about his journey with the leprechaun. He told us how he rode rainbows high in the sky and that one time, he actually got a glimpse of that famous pot of gold! Now we did have to wear something green on our school uniforms on St. 's Day. And my mother would cut a four-leaf clover out of green construction paper and pin it to our shirt pockets before sending Lenny and I off to school.

Today, I will be wearing something green. Because if you don't wear something green today, people are allowed to pinch you...ouch!A lot of people on St. 's Day go to an Irish pub to celebrate. They wear green hats, drink green beer and, if they overdo it, end up having green hangovers. LOL!Okay, I don't eat corned beef anymore. But I am going to make a nice dinner tonight with cabbage, lots of vegetables and some steamed chicken. And I'll be thinking of all the green days I spent at home with my family back in New Orleans all of those St. 's Days, years ago.Now if you're out tonight and drinking green beer, be sure you have a little leprechaun there to drive you home!Love,
