Many of you have told me over the years that you wish I'd put my Sweatin' Workouts on DVD. Isn't December just the perfect time for wishes to come true? Are you ready to face that Holiday Food? Well, let me ask you something... Who or what do you believe in? Goodness, I was taught to believe in everything! I believed in the Tooth Fairy. I believed that if a tooth fell out and I put it under my pillow, a fairy would leave me a quarter, or if it was a generous fairy, a dollar! I believed in the Easter Bunny. I believed he hippity-hopped into my home and left me a basket of chocolate eggs and marshmallow chicks. I believed in Santa, and I knew that if I was a good boy, he would bring me toys! I believed in my mother, Shirley. No matter what she said, I believed it with my whole heart and soul. And I believed that there was a God - a kind, warm, generous God who rewarded those who were good. I`m sure you believed in some of those things, too, but the big question is, what do you believe in now? How funny - I still believe in Santa, the Easter bunny, and the Tooth Fairy. And, I believe in God more now than ever before. Shirley`s words are still with me, and I still believe in all of them. But somewhere along the line, I started to believe in something else. I started to believe in ME. I believed that I could do anything that I dreamt of doing and that if I believed long and strong, my belief would become a reality! The big $64,000.00 question is do you believe in YOU? Yes, there have been ups and downs in your life, but at the end of the day, do you truly believe you can do anything that you put your mind to? Without this belief in yourself, nothing great will happen in your life. You must believe if you want your wishes and dreams to come true! You all know that one thing I wish for is to get PE back into all of the schools in our country. I hope you've been reading all of the updates we've been posting. Keep coming back to our update page to see the latest information...and thank you so much for all of your support! For those of you who are Clubhouse members, we'll still be having our Monday chats, and our Monthly Auditorium will be on December 10th. Will I see YOU there? I plan to have a fantastic December! As far back as I can remember, my parents always took Lenny and me to Maison Blanche Department Store to wait in the Candy Cane Lane to sit on Santa`s Lap and whisper our wishes in his ear. Of course, we went away with a beautiful 8x10 photo of Lenny and me and the "Jolly Man in Red"! By the time I was 6, I planned my visits to Santa very carefully. A week before the event, I began working on my wish list for Santa, thinking carefully about what I wanted, and using my best Catholic school handwriting to win St. Nick over. I always handed him the list with a small tin of homemade sugar cookies! What did you ask Santa to bring you when you were a kid? If you could sit on Santa`s lap now, what would you ask him for?" What's on your wish list now? Wishes are wonderful! The day you stop wishing is the day you stop believing, and when you stop believing, well, then it`s really all over. You must believe! And if you don't already, you must learn to believe in you! I believe in myself...and I believe in you! So...while you're working on that list for Santa, Santa has a little gift for you! I know December can be a tough month when it comes to food. So, I have a few festive red and green recipe ideas that will keep you healthy AND in the holiday spirit! First - Jingle Bell Peppers. I love stuffed bell peppers, don`t you? And it all starts off with the peppers. Pick out a few shiny red and green bell peppers. Cut off the top of each one and clean the inside. Everyone has their very own special recipe for stuffing. The ones I`m stuffing will have brown rice, a little bit of Egg Beaters, parsley, green onions, some spices, and cut up pieces of shrimp. Just assemble the ingredients, fill the bell peppers, and bake. I bake mine with tin foil on top so the peppers stay very moist. When they`re done, turn on the broiler, add some shredded mozzarella cheese on top, and broil for 5-7 minutes. Here's another one for you - Christmas Salad. Buy some fresh string beans. Cut off the tip on each side, and steam them until they are al dente. In other words, quite crispy. Remove the beans from the steamer and let cool. In a bowl, mix together some olive oil, white wine vinegar, Dijon mustard, chopped shallots, and cup up pieces of pimento. When the string beans are cool, add them to the dressing, and stick them in the fridge. Arrange the green beans on a bed of red curly lettuce, and sprinkle with a few tablespoons of freshly grated snow... I mean parmesan cheese! ;-) The last recipe is called Santa`s Pasta. I know many kids left cookies and milk for Santa, but not me! I always left pasta! Maybe that`s why he put such fabulous presents under our tree! First I make my marinara sauce with a touch of olive oil, canned whole tomatoes, freshly chopped up basil and parsley, and a pack of Splenda to tone down the acid. I cook the sauce on very low heat for about an hour to thicken it. While that`s happening, I cut up zucchini into cubes and cherry tomatoes into quarters and add them to the sauce. Now... what to serve it on. Yes, there`s always spaghetti or angel hair pasta. A lot of markets now carry designer pastas, and the one I like is a sun dried tomato fettuccine noodle. The noodle is sort of pink with all these bits of sun dried tomato nestled in the pasta. There are so many shapes of pasta now available. I've even bought red and green pasta in the shapes of bows and Christmas trees! Check out the pasta section in your favorite store. This holiday season, look through the newspaper and see where Santa is visiting your nearest big mall, and wait in the Candy Cane Lane with your list in hand!
