Happy day after Christmas to you!

I really had a great holiday yesterday. I got up very early and exercised to Christmas music. Of course, I have to speed the heck up on those Christmas tunes! I did my cardio, my strength-training and some serious stretching, too.

One of my favorite Christmas songs is All I Want For Christmas Is You by h Carey. That song just makes my blood bubble and I just can`t stop moving when I hear it! One year, I was playing it over and over again as I trimmed the tree. h`s song brought me so much energy, I was able to trim that tree in only 22 minutes!

After my Christmas workout, I began cooking as I listened to more holiday music. And oh, what did I cook? Well...

I made a nice chopped salad with ten different vegetables including a few holiday-colored red and green veggies. (It was so pretty!)

Next, I stuffed some chicken. I made a basic bread stuffing with homemade bread, chopped celery and onions along with some delicious spices to bump up the flavor. I stuffed my chickens and tied their little legs together and I was ready to start cooking. And where did I cook them? In the oven? Well, no. I cooked them on the grill at a very low temperature.

To accompany the stuffed chicken, I made string beans and a carrot soufflé. I also made cranberry relish and whipped up some mashed potatoes. I hadn`t had mashed potatoes all year and just really had a-tastin` for them yesterday. I must say, all of the food looked so good spread out on the dining room table.

So what did you cook yesterday? Turkey? Ham...what? And what kind of side-dishes did you serve? Did you whip up some potatoes, too?

And how`d you do handling the food yesterday? (You knew I was going to ask you that, didn`t you?) Did you stay on program? Did you take my advice and eat a lighter breakfast and lunch in preparation for the big holiday meal? Did you watch your portions carefully as you got a little taste of everything?

And when it was dessert time, how`d you do? I hope you did well because I know I did. I was able to taste a little bit of everything while staying within my FoodMover limits. Now let me get back to the dessert part of yesterday.

Back in the 70`s, there was a restaurant in Beverly Hills called The Saloon. One night, a lady who was a regular customer brought in a chocolate mousse cake she`d made. She asked the owner to give a sample to any customer who wanted to try it.

I was a customer that night and I definitely wanted a taste. Her cake was fabulous! She went from selling her Chocolate Mousse cake to just one restaurant to now, over 30 years later, she has an incredibly successful baking business and sends her cakes all over the world!

I bought one of her cakes to serve at Christmas dinner. And I only had one quarter of a whole slice. I just wanted a little taste to remind me of my first slice back in 1976 and, believe me, it was every bit as good!

After dinner, I burned a lot of those calories by cleaning up the kitchen. I'm proud to say that it was a very healthy Christmas for me!

Now, if you didn`t do too well yesterday and gave in to a few temptations, don`t do a repeat performance today. Plan your meals, my friends and do get your holiday workouts in, too.
