I HATE those little animal cookies, because they are SO delicious and I never had ANY idea how many calories were in those things!!! My kids love them and beg for them every time we go to the store, but I try to keep them out of the house because I could easily eat a full meal's worth of calories without even stopping to take a drink of water. Guest guest Posted January 14, 2007 Report Share Posted January 14, 2007 Well, I did this baked spaghetti casserole, a little strange, but hubby took (small dose of ) seconds, which almost never happens. And because there's only the three of us, a 9x13 casserole will easily do three dinners. Tonight, we finished off some leftover squash, but I have salad stuff for the other days. The original recipe was vegetarian, but I added browned ground beef, chunks of onion and mushroom to the tomato sauce; that might be why mine seemed a little dry; the mushrooms would have absorbed some of the liquid. I think if I were to do it again, I would make pasta ahead of time and cool. The sauce mixed INTO pasta (not the sauce on top) was basically eggs mixed with cheese and onion, and of course, the egg wanted to set up as soon as it hit the hot pasta. You could also use low-fat or fat-free cheese, egg whites only and add chunked veggies to jarred sauce, like zucchini, carrots, celery. And, whole-wheat pasta. We'll make this healthy yet! For the workweek, I am taking rice cakes (I actually don't mind them; the lightly salted and white cheddar ones are quite good) to snack on. They are good with my ever-present herbal teas, and they usually keep me out of the vending machine. I also bought a package of "peanut butter choc chip" flavor for daughter to take to school (comm. college - just a mile from here) That sounded a little too much like "dessert" to me but she said she'd test them. A lot of people call them styrofoam but as a lifelong nibbler/grazer, I need the chewing action. If someone doesn't like them or makes fun of them, that's fine. All the more for me 8> Re: ganglion. Now that I know what it is (I hoped it was something like that), I can manage fine just leaving it alone. I live in sneakers, so it's not a problem for shoes. I'm just glad it wasn't anything serious. Now, I think I will make an early night of it; take my meds like I'm supposed to and get more than 6 hours of sleep. What a concept! It was really super cold last weekend - sub zeros, etc.... brrrrrr.... got some snow... then it warmed up. Tonight, the roads were all clear, side streets mush. Yuk (was like 34 at last count).... p.s. I know you have had a rough week Eileen - if you make it to WW Sat don't be discouraged if the scale is not friendly, ok..?
