FORTUNE COOKIE SAYS

Eat with chopsticks and lose weight! Don`t laugh; it is so true! There is

now a major obesity epidemic in the Asian countries because people have to

put down their chopsticks to pick up a double cheeseburger with their hands.

We handed over fast food eateries to these countries, and now they have the

same problem as we have here in America!

Okay, back to the chopsticks. Chopsticks take coordination to learn and to

use. You can`t say that about forks! When you use chopsticks, you can`t

watch TV or read a book, because you will spill everything all over

yourself! With chopsticks, only a certain amount of food can fit between the

sticks. You and I both know how much food you can pile on a fork, and when

you pick up the food with the wooden sticks, you have to make sure you can

balance that food from your plate to your awaiting mouth.

Last night, I cooked up a meal called " Geisha Delight, " and yes, I used my

steamer! In the first bowl, I put 6 chicken thighs with the skin taken off,

but not the bone. The bone gives flavor to the meat. In the second bowl, I

fixed jasmine rice with chicken broth and 2 drops of almond extract. And in

the third bowl, I put baby bok choy and a can of whole water chestnuts.

After I set all the bowls, I turned it on and made the Geisha sauce. Here`s

what you do.

Combine 1/2 cup of low sugar or sugar free apricot preserves, a tablespoon

and a half of low sodium soy sauce, a half of an onion cut up and sautéed a

little in Pam, a tsp. of minced garlic that conveniently comes in a little

jar, and a pinch of hot chili flakes. Mix all together, and simmer until all

the flavors have gotten to know each other, about 5-7 minutes.

Ten minutes before the chicken was supposed to be done, I carefully opened

the steamer and spooned some of the sauce on the top of the thighs… no, not

my thighs, the chicken thighs. ;-) And when everything was done, I added a

teaspoon of the sauce and mixed it in the jasmine almond rice.

The chicken was heavenly, the rice fragrant, and the bok choy and water

chestnuts tasted so fresh and crispy. I ate what was on my plate with the

help of my chopsticks that my dear friend brought me back from China! Oh,

fortune cookie also says, " Your laundry at the cleaners is ready! "
