Hi all--

First of all I need to tell you, that my prayers are in there for you and

thoughts are with you. sometimes for me the course of how this illness is on me

is .. somehow stress connected. (?) I know that where you are must be not at all

like home, but perhaps you can relax some...? I do hope so; I know that I might

well be seeing my own future here. I'm just not there as yet!

With the protein ... I had problems, some minor with digestion in the beginning

and am better now. I could not give any rhyme or reason for this however! Just

that some symptoms have sort of .. up and left. I have tried to improve on what

I eat, what is in the house as I too have to rel only upon myself to cook, shop,

etc.

I live in the states, the North East (NYC) and we get a very decent amount now

in our local groceries of organics. Also gluten free foods. I've no special need

for the gluten free, but still have some things anyway as there are other uses.

One thing is Amaranth Flour; this is a gluten free flour, and the label says to

substitute 1/4 of conventional flour with Amaranth. Not sure why this is as I

would tend to use ALL

Amaranth because of it's nutrients. The protein is listed a 4g (grams?) and iron

is 12% (a good thing for me as I am always low in iron). This particular mill

With the probiotics, I know there are a good many farms which specialize in

probiotic products now as people realize the health benefits. I do use Kefir

yogurt as much as I can now, and also buy

plain Yogurt from the organic farmers at our local Greenmarket. They also make

their own saurkraut like products which are wonderful. I've been getting them

and using them for awhile now just because I like them -- they do not sell over

the internet, but they do have something o say about their farming methods. If

their Beet Kvass, and another called Raw Kim Chee which is delicious. I was

afraid when I bought them they might be too strong, but I don't find them to be

that way at all. I guess this isn't much knowledge, but I'll also try my

vegetarian friend who underwent chemo not too long back and had a great deal of

trouble keeping anything down.
