MUD GROWN

I don`t know what day God created vegetables, but it was a colorful and

healthy day for sure! So many of you complain, and you have for years, about

having trouble eating all your vegetables every day. You`re also very verbal

about what vegetables you deplore. The two veggies that come up so very

often are beets and Brussels sprouts. The body loves these two, and why

shouldn`t you? Many of you did not grow up eating a big variety of " mud

grown " foods, or maybe you had a bad experience with a certain vegetable. I

say forgive and forget, okay? Let`s start with beets.

This is a recipe for a wonderful, pretty, and nutritious salad! Buy 4 large,

fresh beets. Cut a little off the top and bottom and steam until tender.

Remove them and let cool. Once cooled, just touch the outer skin, and it

will come off like Gypsy Rose Lee`s dress. Now take a melon baller and

remove most of the meat of the beet, leaving the beet looking like a small

purple-y bowl. Cut up what you took out in cubes, and add some chopped

carrots, celery, cucumbers, purple onion, or any of your favorite crunchy

vegetables. Mix with oil and vinegar and stuff each of the beets. Add some

extra dressing on the plate; then when you cut up the beet bowl, you can dip

it in the dressing for more flavor. You can also stuff the beet with chicken

or tuna salad.

Now for Brussels sprouts. Think of them as small cabbages. After cleaning

them, take a sharp knife and finely shred them. Also shred up a white sweet

onion. Sauté the sprouts and onions in a little " I Can`t Believe it`s Not

Butter. When they`re cooked, add a few walnuts that have been chopped

finely. Serve the Brussels sprouts over brown rice, accompanied by a grilled

Dijon chicken breast or a piece of steamed salmon with lime juice and

chopped basil. (Pour a few tablespoons of balsamic vinegar on the fish

before steaming.)

You know, you can also steam a few sprouts and add them to a veggie kabob. I

will continue giving you ideas for cooking up tasty, easy vegetable dishes

for you to enjoy. Go to the market this week and try a few veggies that are
