That`s because I plan to cook all day tomorrow as I create recipes for a new cookbook I`m writing. You know me, I'm a happy camper when I`m in the kitchen. Matter of fact, I usually write my motivational messages to you here in the kitchen as I sit at my butcher block table. I`m sitting there right now, in fact. You`d love the stools. They`re painted black and white to look like a cow. Anyway back to my story. The market was jammed, packed with people like sardines in a can. I forgot everyone was loading up on food for the Memorial Day festivities coming up Monday. The deli was so busy, it looked like they were giving food away! I went over to the fish department to pick out some beautiful halibut steaks. I do hope you`re eating fish, two or three times a week, by the way. My plans are to grill the halibut then top it off with fresh lime and tomato salsa. For the salsa, you can use cherry, grape or compari tomatoes. You begin by simply quartering the tomatoes and removing all the seeds. (About 2 1/2 cups will do.) Add two tablespoons of fat-free Italian salad dressing, one finely minced medium shallot, one stalk of chopped celery and one tablespoon of fresh lime juice. Add a dash of salt, black pepper and cayenne pepper. Mix them all and let the ingredients sit for a while, so the flavors can " marry. " (So romantic-sounding, huh?) When the fish is ready, glide that baby onto a plate and top with the salsa. Oh! I`m, growing weak just telling you how to make it. I also bought some California artichokes so I can stuff them. Did you have ever have stuffed artichokes? My mother made them a few times a month. Her stuffing was made up of Italian bread crumbs, green onions, parsley, lots of olive oil and Parmesan cheese. They were almost too pretty to eat! I change the ingredients a bit to save on calories. I remove lots of the bread crumbs and replace them with chopped vegetables. There will be some trial and error here and that`s why I bought eight chokes, to get it right. I`m also working on a lasagna that's just about two feet high. (That was just to see if I still have your attention!) If you continue to eat the same meals over and over again, you will get bored and your eating habits may start to wander.
