Carmel Apple Salad 1 can pineapple tidbits (in own juice) 1 small container fat free cool whip 3-4 medium granny smith apples--diced 1 package butterscotch pudding--sugar free & fat free Pour entire can pineapple into a bowl (juice and all!), then add apple pieces. Stir to coat (the pineapple juice will keep the apple from turning brown). Then add pudding, stir to mix. Fold in cool whip. Refrigerate at least one hour before serving. (Let it sit for 3+ hours for best flavor.) This is SO easy and SO good! Even my dad liked it and he's super picky--the man can smell 'diet' food a mile away If made as directed, it's 2 points per 1 cup (about 100 calories). Should be 6.5-8 cups. Again, this is wonderful. Filling, too. I turned down ice cream in favor of this yesterday and didn't think twice!
