I am running a bit behind today as I ended up falling asleep curled up in a blanket after I got Miranda on the bus and before Meredith and Emma woke up. Now that things are back to " normal chaos " instead of " chaos from hell " I am hoping that getting back on my meal plan will be much easier. We don't eat alot of canned fruit around here, but Miranda (7yr old) likes to take it in her lunch for school. I open a can and get 3-4 days out of it for her. I made up a bunch of brown rice the other night for dinner and froze it up in single serving sizes that way I can make my stirfry and have rice without much hassel. Also this summer I would make a big pot of veggie gumbo and freeze that in single serving sizes as well. I could have soup and salad for lunch and still have pleanty of windows left over. As far as the stifry goes I like to get the packages of broccoli slaw or cabbage that are already made (like bagged salads) when they are on the reduced rack (outdated) they normally last a good week past their date and work great for stirfry's without much hassel. Dinner is going to be meatloaf with shredded zucchini, onion, green pepper, spices and then we top with yellow mustard & ketchup mixed together. I'm not sure of the side dishes.. either Mac-n-cheese w/a salad or Mashed potatoes and green beans. Hubby and the kids will probablly have some bread and butter with it, but I will skip that.. enough carbs with the potatoes or mac-n-cheese. > Oh, I'm in day five and lost a pound I think. I like them a lot and they go fast. I also buy fresh fruit, apples, oranges, grapefruit and tangerines, all of which keep rather well. I do buy frozen veggies and some meat, Lean Cusines, and chix products. You can imagine L.C. are relatively expensive at $3.19 each for the lunch size, which I have for dinner. I try to buy on sale when I can. I really don't like to cook and would rather open a box. Cereal, my morning staple, as you probably know is outrageously high in price. I buy that on sale also. I can't digest dairy so I drink soy milk at $1.79 a quart. It's 34 here in Houston this morning so I'm going to drive Lynn to school instead of hopping on my bike. Brrrrrr! My parents gave us a VCR for Christmas so I can set that up in the bedroom. It's so hard to get back into the routine of getting up early and getting her to school on time. I feel like I'm forgetting something. It's going to be quiet around here today with just Vonn and I. We'll just putter around the house today and get the laundry done and the Christmas decorations put away. It will be kind of nice to have a quiet " homey day " after the hustle and bustle of the holidays. Vonn starts back to preschool on Thurs. then we'll be back to our normal schedule. I've almost always had limited funds, I understand what you're saying. Do you have a dietary restriction that you can't spice up some of your meals? I go through a lot of garlic and onions - can you tell I'm single LOL). a salad lasts for quite a few days - what about making one and eating it everyday - you should run out of days before you run out of salad - at least I do here. congrats on your loss so far - keep up the good work! When I was working in an office, I'd take a Tupperware cup with my allotment in it. they just had the LC's or maybe it was healthy start on sale here for $2 so I tried the turkey and gravy - I was surprised it was good. It is cheaper to get a box of cereal and a box of fruit juice pouches for Miranda to take to school for breakfast (doesn't want to get up any earlier to eat at home) then it is to have her purchase her breakfast there at $1.35/day. She just eats it dry but that is her choice. We don't go thru alot of milk here, normally we can finish it just before it expires, but some times the gallon sours before we can finish it. I hate getting up early, but I do enjoy the kids being back to school.
