Layered Rice Casserole

Amount Measure Ingredient -- Preparation Method

5 cups cooked brown rice

1 cup cooked white beans

2 cups frozen corn kernels

2 cups canned tomatoes -- cut up

1 medium onion -- chopped

2 cloves garlic -- crushed

1 tablespoon soy sauce, low sodium -- tamari

1 teaspoon thyme

6 ounces tomato paste

1/2 cup water

paprika -- to taste

Saute the onion and garlic in 1/4 cup water.

Combine the tomato paste with 1/2 cup of water.

Combine with the beans, corn, tomatoes, soy sauce, and thyme.

In a casserole dish, layer 2 1/2 cups rice on the bottom, then the bean

vegetable mixture, then the tomato paste mixture. cover with the remaining

rice. Sprinkle with paprika.

Bake at 350 degrees for 45 minutes, covered for 30 minutes, then uncovered

for 15.

Hi Sue,

ohhh thanks for sending that in. It sounds so yummy. I was wonderin, if

I was to make this with ground turkey in it how would I figure out the

difference in calories and things with the turkey added?? Is it possible

to figure it out that way? I just need a casserole for Church and it

would not be eaten if it had no meat so I thought of that but for myself

and a couple others who are tryin to loose I wanted to figure out our

counts and all. Thanks again for sharin

I just added 1 pound ground turkey to the recipe in Mastercook, and here is the nutritional info for it:Per Serving: 325 Calories; 6g Fat (17.1% calories from fat); 18g Protein; 51g Carbohydrate; 6g Dietary Fiber; 45mg Cholesterol; 390mg Sodium. Exchanges: 3 Grain(Starch); 1 1/2 Lean Meat; 1 1/2 Vegetable; 0 Fat.

or is it something you purchased??? I am so excited now. I want to make

this for our Church. and if I only have a half servin it wont be so bad

on me and the rest of them will be gettin somethin healthier than normal!

Here's a thought...a friend turned me onto to soy crumbles. I tried it in a noodle and tomato casserole (literally noodles, spaghetti sauce and some onion) and I loved it...tasted just like meat to me. Anyway, Morning Star makes soy crumbles, sold in the freezer section. A nice way to add protein without the fat. It's just like ground turkey...but meatless. I think I might add some to the rice casserole recipe.

It's a recipe software that used to be sold by Sierra but is now owned by ValuSoft (http://www.valusoft.com) . I love the way it figures out nutritional info and is able to export recipes with all the info intact. Some other recipe software, and earlier versions of MC, will only show the info in the program but it doesn't print out or export.

Well a *full* serving ws only 300 or so calories, and not that many exchanges, so why not have it?

Check your package of rice, since not all brands puff up the same. Some rice

I cook will be 1/2 cup makes 2 cups, others 1/2 cup makes only 1 1/2 cup

cooked.

And...how much

The recipe is for 8 servings, so I would assume a full cup. Still, that's

not much when sitting by itself on a plate, so be sure to watch those

portion sizes and fill the empty plate up with a salad or use a smaller

plate.

Or just eat 2 servings - it didn't have *that* many calories/exchanges so

with just a little thought you can easily swing it. On the McDougall diet

plan, you wouldn't worry about serving sizes or exchanges at all, since

these foods are so low cal to begin with. The brown rice and beans are

*very* filling, so not many people would be eating more than 2 servings (500

cal) anyway.
