It takes that stomach acid to help the digestive system work. Other healing fermented foods include apple cider vinegar (unpasteurized), kefir and yoghurt. Anything even slightly related to glutamate (and not necessarily glutamic acid only), triggers my brain symptoms and increases clonus and insomnia. (and I thought glycine was supposed to be calming?) On a recent amino acid test, my glutamate level was very high. I do take magnesium glycinate, because I had always heard that that form was one of the best absorbed (and also good for the muscles ). But now I am wondering... I would suppose that it might take awhile for the glutamate levels to decrease (from blood and from tissues?), so that one would have to NOT take glycine -containing supplements for quite awhile before necessarily noticing whether it made a difference or not? Like maybe a few months? Is anyone aware of any other connection between glycine and glutamate? Kim chee, if made properly, is buried in the ground and allowed to ferment naturally for several months (I forget how long!). And most of them that I've sampled are hotter than hades, too! My family made their own sauerkraut too. Eastern Europeans. I'm going to keep my eye out for Gibbons' first book. Les ----- Les MoM has been working for me since 2001 or 2002. Very easy to take and to adjust a dose. I do not argue with the experts and scientists, I just do/take what works for me. Maybe because my Lyme brain etc, is so sensitive to begin with(plus metals) I am looking forward to feeling even better over the next month or too by not taking it any longer. Thanks for sharing.
