From an old milk calendar. Yummy - thought I had lost it. BCC to

several people and lists. in ON

Quick Cashew Curry

1 medium onion 1 1/2 Tsp. curry powder [mild to medium]

1-2 cloves garlic 1 Tbsp flour

2 Tbsp butter 1 1/2 cups milk

1 1/2 lbs cubed meat [beef or pork] 1/2 Tsp salt

1/8 Tsp cayenne pepper [or to taste] 1/2 cup cashews

2 medium tomatoes- cut up N.B. Tsp = teaspoon Tbsp =

tablespoon

Sauté onions & garlic in butter, add meat and brown.

Blend in curry & flour, stir constantly.

Add milk & stir until smooth.

Add salt and cayenne and cook over medium heat - stirring

constantly until thickened.

Add cashews & tomatoes. Heat [on low] for 10 minutes.

Serve over rice or noodles [broad egg noodles work well]. Serves

4 normal servings thus make sure you have enough rice or noodles

for sauce. This can be main course.

Reheats in nuker well.
