Sally, no problem exposing enzymes to room air, unless you're in a

steamroom!

Lactase units:

The newest FCC unit designation is Acid Lactase Unit (ALU) to

differentiate it from Neutral Lactase (NLU). I believe LacU is the

same assay and so the numbers are the same, no conversion needed.

Same with LU, ALU though differentiates it from lipase unit, also

abbreviated LU.

LU, LacU, and ALU are then equivalent numerically.
