I had an endoscope in July last year and they can either give you throat spray to numb the back of your throat or sedate you I was sedated and don't remember anything. All I can remember is the doctor putting the needle in the back of my hand and then waking back up again in the recovery ward. I have not had a dilation but would have thought that they would do the same and offer to sedate you. Are you finding that food is getting stuck when you eat?
