This might be a silly question but my daughter doesn't have celiac's and I was wondering if these recipes mentioned and links given are good for everyone even without celiac's? So far all of her tests have come back negative, but we love the diet. :-) I would think the more fruits and veggies you can pack into a child, the better. They contain so many wonderful antioxidents and vitamins. And I think we are just beginning to learn that taking in vitamins from their natural source is much better then just taking a vitamin pill. Actually, eating more fruits and veggies is good for ALL of us and the EveryDay Food site is from Martha , so that food is for anyone who likes good basic foods with lots of flavor from scratch. Although starches are something people with Celiac disease have to be careful of. Especially if it is says modified food starch. Thanks for the information from Martha's site! I didn't know you could freeze peppers! you all have been a blessing! Every parent should come with a built in cooking capability! I can bake and never fail a recipe with baking! I don't do much with lettuce before hand either. I cut out the core in head lettuce and wash it well, then return it as is to the fridge and rip off what I need when I need it. Loose leaf type will keep well IF you dry it pretty well!!! Don't wrap it up tight!! Let it breathe and just keep it damp, NOT WET. Same for broccoli and cauliflower. Those don't like to be real wet and keep better on the dry side after cutting. Tupperware used to sell lots of storage items to help keep veggies fresh... I find ziplocs with a damp paper towel to work well. Once you are on a Gf diet your symptoms disappear but you can never eat gluten again. Interesting article, thank you for sharing. This is all so interesting. I often wondered if my 7 year old has it. I had trouble keeping veggies in my fridge too. If you can find a Tupperware person, their " Fridge Smart " containers really work. I've got a couple, and my veggies stay fresh so-o-o-o long now! I always dice up green and red peppers and freeze them for whenever I'm cooking anything that calls for diced peppers. Don't have to stop and dice. For instance, lettuce I think has one button open and one closed. Some veggies require both buttons closed all the way with no air at all going in. I have a very old fridge and I couldn't keep any fresh veggies for more than a few days until the FridgeSmarts. I love them.
