Still chugging through the archives - mid october 1992.

Occurred to me that in any other group saying " I smell today " would not be cause

for

applause.

ie

(who probably smells today but can't tell - poor Prada)

Thank you for replying, i was getting so worried that maybe i had killed off my

grains :( I will rinse them a little more and see if that helps....

Usually I have great water kefir. But lately I, also, have noticed an

" off " odor to my water kefir. Kind of old socks, like rotting garbage. It

always seems to occur after the second day.

I finally realized what is happening: it's the increase in ambient

temperature and humidity. Now that outside temperatures are warmer and I

have my doors and windows open all day--allowing breezes of 80 degree air

in my home all day--the kefir is fermenting at a much faster pace. So now

I'm going to change it out every 24 hours, maybe even sooner..

My new water kefir, made with 1C organic lemonade and 2T unbleached sugar,

smells and tastes like a Mike's Hard Lemonade. Slightly fizzy and with a

lot less 'kick'. My second batch I added 1T unsulfured molasses to the

lemonade and the molasses is way too overpowering, so I've been adding 1/4

cup of that finished kefir to new 1C batches. These grains reallllly love

the molasses and are growing fat and bouncy.

The 'smudge' that settles on the bottom of the jar, that's brand new

grains, right? I've been leaving that in the jar with the new batch. Last

week I started with 2T of fresh grains, have made 1C of kefir a day, today

I'll end up putting some grains back in holding position in the fridge.

Apple juice kefir is just about ready.

I'd love to replace my instant ice tea habit with kefir, but I need to wait

for my GI to adjust. I've ramped up to 1/2C a day, but Oi!
