Pamela, there is such a wide variety of gluten-free foods out there right now. We are lucky as those who came before us didn't have so many choices.

You can use Cornstarch as a thickener, or a flour. Flours: Rice flour, tapioca flour, coconut flour, ground almond meal. There are tons of gluten free pasta out there. Deboles even makes one. My husband makes a wonderful chicken/rice soup from scratch for me..

There are even some canned soups that work: potato/leek and chicken/rice.

I think it's either a law, or a selling point, but most products that are gluten-free say it prominently on the front. Otherwise, read ingredient labels carefully.
