I went to town Wednesday (no small undertaking when you live as remote as I do) and got buffalo at the butcher and found the most glorious organic collards in the natural foods shop. Yesterday, I rolled the buffalo up inside steamed whole collard leaves with a whole bunch of other veggies - onion, red pepper, carrot, tomato - like cabbage rolls. Today, they are cooking in the crockpot. I haven't decided what to feed my type-A family yet, but I know what I'm having for supper. Veggies are more important to how good I feel than meat is, although I feel best with both. Some gluten-free friends introduced me to the idea of using whole steamed collard leaves as an alternative to tortilla wraps. Being as that pre-BTD tortillas were an dominant part of my diet, I'm very happy with this idea. The gluten-free friends (celiac) aren't BTDers, but they cured their 3yo daughter of her autism symptoms by ditching both gluten and casein (dairy protien). My severely autistic nephew was cured of his bi-ploar disorder by the same diet change, although his autism remains. Somebody tell Jim Carrey to try this with his girlfriend's son.
