Breads and crackers need all those avoid things to hold them together, the grains are expensive, and their taste is different. Not a lot of demand for them. Have you tried any of those grains yet. There are rice crackers without wheat or spelt. What I'm really looking for is something easy for a snack; something I can put nut butter on, for example. I don't tolerate even the neutral starchy grains (like rice and rye), so I was looking for something less starchy, less grainy. Hoping there might be an online source, although I couldn't find one. Without the good growth your food is not properly digested and easier for the yeast to return. Follow the diet, focus on meats and veges, exercise, drink water and don't worry too much about calories. It is tiny and Ethiopians make bread out of it (more like a pancake) which they use to scoop up other foods like stew. That's about all I know about teff; I've never seen it.
