I'm a celiac on BTD as well, and they are pretty easy to combine since Os don't need grains in their diet. On good weeks I only have a little millet, amaranth, quinoa or sweet rice flour that I use in cooking...for breading or to bind meatballs and such. For starchy fillers I try to focus on sweet potatoes and other starchy vegetables. Re: spelt differences I'm new to this diet and I'm no expert but spelt contains wheat and I thought we were not suppose to have wheat??? I believe I'm correct in this because Celiac's cannot have spelt because of its wheat/gluten content. There are some great Gluten free flours on the market that won't have wheat in them. Gluten refers to the protein level and how well it " glues " etc. It's not something added. The general misconception is that Celiacs can't have wheat but it's really that they can't have gluten, which is why other flours are also counter indicative to them. >There are some great Gluten free flours on the market that won't have >wheat in them. Flour refers to a ground up grain. In popular shopping and marketing it generally refers to wheat but flour by definition doesn't mean wheat. Does any of this help? Because of the changes in it we now react to it.
