Isn't it the acidity that does the leaching? and I think lemon juice is usually more acidic than vinegar. Gretchen Re: Iron Absorption Problem - Flora & Bone Broth I don't think so. Lemon doesn't leach the bones of it's nutrients (ie calcium, etc.). But I find that the tiny little bit used in that whole big pot doesn't bother my stomach at all, whereas I'm usually pretty sensitive. And I haven't heard any cancer patients complaining, not even the ones who can barely eat because everything upsets them. But, yes, I know vinegar is an avoid. We just classify this recipe as a healing recipe and use it as such. It's not an everyday recipe.
