Safe Temperatures for Cooking with Cold Pressed Oils

Hello Agnes,

You wrote to Dianne M. recently re her olive oil congealing in the fridge.

I had been keeping my eye out for information on cold pressed oils and safe temperatures to heat them to, for a long time. I have not had much success with Search Engines.

Anyway, you said in your post, that cold pressed Sesame and Olive Oil were safe to heat up to 100 C for a short period of time, because they were monounsaturated.

The reason that I am enquiring on this site, is that I would like to be able to enjoy a good variety of healthy snacks and treats in a non gallstone producing diet, and I was wanting to safely use oil instead of butter. Would you recommend using, say, Sesame Oil in cooking a cake at the normal 180 C for 45 mins or, would this harm the 'cold pressed' properties of the oil, and therefore make it possibly gallstone producing? I was considering using unpasteurised butter in my cooking too, but am finding it hard to obtain at the moment.

Also I was wondering if you might be able to supply me with some web sites so that I can continue with any more queries that I may have in relation to this topic.
