than the flesh " ... " And in every variety tested, the skins of the

apples contained substantially higher levels of antioxidants than the

flesh. "

There is always a concern about eating apple skins which may be

sprayed with pesticides, but organic apples should be OK. Something

that is not mentioned in the article is that the skin is a good source

of fiber also.
