Hi Gay:

I have no idea what causes your lipid values to fluctuate, but I can

tell you absolutely for sure that the very well organized, huge,

100,000+ participant, 30 year, female Nurses' Health Study found that

for heart disease incidence those who consumed a lot of olive oil did

only a little bit better than the average (and think what type of

diet the average represents, UGH).

However, those who consumed the most polyunsaturated fats did

considerably better. I don't think they have the data broken out

well enough to know specifically which polyunsaturated fats are the

best. But they did perform much better than the monounsaturated oils

in that study.
