This is a good article on flax seeds/flax seed oil.

As far as you question about baking with flax seed, I'm curious why it would

be different to cook with flax seeds as opposed to flax seed oil (?) Isn't

the oil taken from the seed (hence, flax seed oil)?

Here is some info. from another web site:

" NUTRITIONAL CONSIDERATIONS AND APPLICATIONS: Omega-6 and Omega-3 fatty

acids are known to play important roles in the formation of prostaglandins.

Prostaglandins are important cellular regulators which control inflammatory

processes in the body. Flax seed oil, which contains large amounts of

omega-3 fatty acids and useful amounts of omega-6 fatty acids, may be a

other skin problems, Cancer, Diabetes and Kidney disease. Flax seed oil is
