Guest guest Posted April 28, 2004 Report Share Posted April 28, 2004 Xanthan Gum is a plant based thickener used widely commercially instead of wheat-based thickeners. I have a good friend who suffered years of food-poisoning like symptoms before he and his wife (an md) figured out it was Xanthan Gum. Salad dressings, cream cheese and wheat-free commercial baked goods are usually loaded with it. Put me down as living in Southern Oregon, an hour and a half further than Central Point from the nearest health food store. My coolers only leave my car to unload the food.
