Guest guest Posted June 9, 2004 Report Share Posted June 9, 2004 I'd be suspicious of the rice syrup solids. Some rice syrup comes from barley, though you could probably call them and find out. As a celiac, I have to avoid rice syrup for that reason. (O+ Non-sec) Rice protein powder / Rice I recently discovered that I can't eat rice protein powder, at least the MLO Brown Rice Protein product I bought to use with the egg white protein powder I had. The MLO product has brown rice protein concentrate, rice syrup solids, rice bran. Could it be that the rice bran or rice syrup solids are causing the trouble and not the rice protein? I wonder if I could use some other rice protein product? I was a little surprised to find that the MLO Brown Rice Protein product was causing my digestive system trouble. On the other hand, I fix a tuna rice casserole for my kids about every 2-4 weeks and it does seem to bother my digestive system a little bit too, but in a slightly different way. I use organic long grain brown rice in the casserole. When I have planned ahead to cook the casserole I have tried soaking the rice for about a day before cooking it, based on the information Axel posted several months ago about the benefit of doing that. I think I digest the rice better when it has been soaked for a day, although I haven't done it enough times to reach a definite conclusion. I think the posted information was the conclusions of some study done in Japan that soaking rice for 21 hours before cooking made it more nutritious. Once I find something that bothers me I lose interest in experimenting with trying to find my exact limits with related or similar foods. It is easier just to stick with the clearly good and safe foods. However, I have to admit it would be nice to be able to eat rice every once in a while without having a problem with it. I like casseroles, but haven't made any since starting the BTD because it seems like they all use soup. Guest guest Posted June 9, 2004 Report Share Posted June 9, 2004 Tuna Rice Casserole 2 cups dry rice 3 cans of tuna ? green peas (I use about 1/3 of a big bag of frozen peas) ? chopped mushrooms (use as much as you want) 2 cups soymilk 1-2 Tsp. fresh ground peppercorns 1 Tsp dulse or salt dry parsley Preferably soak the rice for around 21 hours. Then cook the rice separetely. I use a rice cooker. Mix and warm, not cook, the peas, tuna, mushrooms, spices, and about 1 cup of soymilk on the stove. When the rice is done and the other items are warm add them together in a casserole dish. I then add more soymilk, if needed, until I can see the soymilk on one end when I tilt the dish slightly. The amount you use will be based on how moist you like it when you eat it. Optionally, sprinkle dry parsley on the top. Put it in the oven at 350 degrees for about 30 minutes. My kids really like it. It makes enough for the 3 of us for dinner and usually leftovers for lunch for me the next day. Don > Don, Could you share your recipe for tuna rice casserole?
