What is says about the introduction of corn (maize actually - a large white version that is less sweet, also called mielies) in Africa is also true - Pellagra is a serious and common protein deficiency disease there - and it is because the native people are eating maize instead of meat, and not getting the protein they need. Nutrition is a matter of attention to the detail of each necessary ingredient and quantity of it that is needed. As I said, I was looking for other information and found this. I didn't say it mentioned the whole corn and calcium stripping thing. It doesn't confirm your point either.
