That's because the books just say that sheep and goat cheese are neutral. Pecorino means sheep. Be careful that you just don't buy generic romano as there is no guarantee that it's sheep. Picorino is a much harder dryer cheese, made from goats milk I grate it using the small hole hand grater. I see it at the SuperWal-Mart in Paris, TX and Sam's Club has it.
