That's because the books just say that sheep and goat cheese are

neutral. Pecorino means sheep. Be careful that you just don't

buy generic romano as there is no guarantee that it's sheep.

Find a deli or a whole foods/health food and ask there.

Romano is a very good substitute for parmesan. My grandmother

has always preferred it on her pasta. It's a slightly stronger

taste.

Also, is

Pecorion means sheep, so you can find all kinds of cheese that

have that designation. It's a good thing to look for :)

Romano is kinda like feta in that it could be cow or sheep, so be

careful.

It is one of the recommeded cheeses from the Cook Right book.

I like to grate it for my saladsand put a little Nutritional Yeast and

ground up flax seed over it. It seems to keep forever and not loose it's

flavor.

Check the label. There is a cow's milk Romano at the stores. Picorino is a

much harder dryer cheese, made from goats milk I grate it using the small

hole hand grater. I see it at the SuperWal-Mart in Paris, TX and Sam's Club

has it.

Thank you Belinda. I can see my memory at 62 is nothing compared to what it

was in my 50's. I didn't remember it was made from sheep's milk. It has been

a year since I purchased any.
