Jerusalem Artichokes

It has been a few weeks since I tried something new so when I went to

the store today I looked for something new to try. I saw some

Jerusalem Artichokes and I haven't eaten or cooked them before. I

went ahead and bought some. Any advice how to prepare them?

Also, does anybody know what it is about them that make them

beneficial?

Hi Don,

I love Jerusalem Artichokes scrubbed clean, then sliced into my salad.

Delicious and crunchy. I have also added them (as I would potatoes)

with a roast along with the carrots and onions. You can use them like

potatoes.

Of course, they are certainly more expensive than potatoes. Most of

time I use raw in salads. Hope this helps some.

Thank you for the idea of using sliced Jerusalem Artichokes in a

salad. I did that for lunch today and enjoyed the addition to my

salad. I also sliced and steamed one to see what it was like

cooked. It was good too. I still have a couple so I will have to

get a roast and add some to it and try them that way too.

They definitely were more expensive then potatoes. I think I paid

$1.89/lbs. I understand the season for Jerusalem Artichokes is Oct.

to March so they may be better priced then. I don't expect I will

buy them very often, but now that I have tried them I am sure I will

continue to use them from time to time since they are listed as being

beneficial.

Hi Don,

You're welcome! So glad you enjoyed them too. Your price paid is about

right although at times they have been over $3.00. I don't buy them

then. Will have to get more myself, have missed them in my salads. Not

all the grocery stores stock them in my area, so they sometimes hard to

find.

Don,

BTW - one time I kept one back till it had about 5 -6 shoots on it,

planted it in yard and later harvested some of my own. Try it if you

have a space to grow them.

I found the Jerusalem Artichokes at the HFS I shop at a couple of

times a month. I don't think I will find them at the other 3 normal

grocery stores I shop at.

There are other beneficial vegetables that I haven't found locally

yet. I did hear that I can special order dandelion greens at the

HFS. Maybe that will be the next new thing I try.

Thanks for the planting idea. I really should start gardening

again. Although, where I live now I have a very small yard and only

a very small area of it gets a good dose of sun. Still I am sure I

could grow a few good veggies, at least better then most of what I

buy.

I also really want to plant some blueberry bushes!

Trader Joe's have the frozen blueberries in 16 oz bags for about $1.89.

I use those a lot along with the frozen rasberries and the frozen

pineapple tidbits. Those three mixed together make a great desert.

Yes, and Trader Joe's blueberries are WONDERFUL!!! Safeway's organic are

also pretty good.

I have Jerusalem artichokes.

You dig, free tubers of edible size. Maximum one 5 gallon bucket for

personal use.

Seed tubers, $12 /lb. (small marble sized)

$8/lb. otherwise, potato size, washed, bagged.
