Yes cup 4 cup, but on your own birthday you should not restrict

yourself. That is why you want to eat as well as you can other times. On

a few occasions, you can " cheat " and still get away with it.

substituting spelt

My birthday is coming up, and I thought I would bake a cake of which

I could eat a few bites, to satisfy my family who want to celebrate with

me.

When substituting spelt for wheat, do you use cup for cup? I thought

I had saved some recipes that were recently posted, but I can't find

them. I can just create something neutral, if I know the basic

proportions. I have both white and whole spelt flour.

I bake some cakes for my birthday too and am using white spelt. I just subsitute

spelt for regular white wheat flour for regular recep. Sometimes I add a TB of

Arrowroot or tapioca flour, when I feel I need a lot of gluten, but I think, I'm

just overcompensating.LOL

My cakes always turn out just dandy and company never knows I used spelt.

Personally, I think of my birthday as a day I want to treat myself as well as

possible and that includes eating foods that make me feel good!! I've

learned to stop thinking of high sugar/high carb foods as necessary to my

enjoyment

of special occasions. It's just food, it's not love, comfort, entertainment,

etc. Changing that mindset has taken the focus off of food at these events

and lets me enjoy the more important aspects like spending time w/people who

care about me. JMO

I certainly wasn't trying to criticize what or (or anyone else

for that matter) have said on the issue. Just giving my opinion on it. I look

at the foods I no longer eat as if I were allergic to them. No one would

expect you to eat a food you were allergic to knowing it would make you sick,

especially not someone who cares about you. I personally haven't found a time

yet when I " had to " eat a food that is not compliant with my new way of life.

I'm not going back to the way I used to live for anyone. If that hurts their

feelings, then it's not my responsibility. You can only control yourself and

your reactions to others, you can't control them or their feelings.

That said, I don't think anyone needs to feel guilty or beat themselves up if

they eat something they'd prefer to avoid. Just saying that you can have

celebrations without feeling like you 'have to' have this or that food to make

it

special, in MY opinion.

Not me. I love to talk to people who have chocolate devil's food cake with

ample chocolate icing then I take 2 deflects and wait for the misery.

Birthday, Easter, Thanksgiving, and Christmas avoids aren't going to kill me and

by

deciding to splurge before hand I don't feel guilty and I get back on the diet

sooner.

you're put into situations where you pretty much have to eat

avoids. Also, says that he has to have an avoid now and

Don't need a ploy to suck down half a gallon of ice cream.

That's one of my downfalls. I can't believe that I've only had

one scoop of the stuff since I started this way of eating half a

year ago.

I'm playing with the pizza recipe from CR4YT tonight. Added a

tablespoon of soy protein to see what that does. It's

pizzapalooza on foodtv tonight and I got a craving.

Belinda,

Even though we O Secrtors can have soy, if we don't have a reaction to it,

we need to keep in mind that all soy comes from the soy bean. We should only

have 1-3 servings of any kind of beans a week. If added to a bread of any

kind that is a serving, if I remember what Heidi has said. You might like to

go to http://www.dadamo.com/columns/begin/ask2.pl She is not a doctor, but

she is familiar with the material enough that this column of hers can answer

a lot of questions. You might want to see how far back she may have

information. There are times she has to ask questions to find the

information for people also.

Thanks, I'm still not worried about it. I added 1 tablespoon of

soy protein for a recipe that makes two 12 inch pizzas. That

mean it would be about 1/4 serving if I ate half a pizza. Oh,

and it did help. Made for a much lighter, crisper crust.
