eggnog

With only 6-8 oz of cream, how many servings does this make? If I wanted to

make an entire pitcher of it how much cream should I use and how many eggs?

The rest I can figure out.

Being the recipe is so rich I usually share it with another small person

(child). It makes a approx 12 oz. It could be thinned with half & half

without it getting too thin. Also would not be quite so rich either, but

all half & half is pasteurized. The stated recipe is for 1 generous adult

serving.

I have a great one, but it uses raw eggs. Are you okay with that? I

figure all the " nip " takes care of any potential buggers in there....

and, truth be told, I am secure enough about local and organic foods

to enjoy my old recipe. But... be forewarned and use it at your own

risk. That said, I better go find it... I'm up to my ears in

Christmas recipes and haven't seen it. Hmmm....

To any Eggnog Server...

Remember the standard disclaimer, in today's touchy-touchy world.....that

if the eggnog sitting out there has raw milk and/or raw eggs, that should be

disclosed.

Honestly, that is why I do not bother. It would be just my hubby and me,

our kids are too young yet to appreciate egg nog and both families steer away

from our raw milk (and yes even raw cheese!). Pretty sad. But I would rather

they know and have the choice to avoid, than to unknowingly partake. I'd be

pretty ticked if I was a vegetarian and ate something unknowing that there was a

meat product in it.

I remember RawDairy had a discussion on it and there might

be a file on eggnog recipes over there.

Just my personal opinion and 2 cents (which was unsolicited, I know!)

Raw Eggs are no concern to me! LOL, I use eggs I get from MVV and trust them as

much as I did my own eggs when I still had hens. So raw eggs are not a problem

at all for me! I have never put the " nip " in it before and hubby thought it

might be fun to try some this year! LOL

I just made eggnog this morning for breakfast (without the " nip " , I

have things to do today!). My recipe goes loosely like this for 4

servings:

4 raw eggs (I use MVV too)

1/2 pint raw cream

2 cups raw milk

1 tsp. vanilla

1 heaping Tbs. raw honey

Grating of fresh nutmeg

Of course, you can adjust the ingredients for richness and sweetness.

I like to have my tastebuds strain to taste the sweet. You could also

use stevia to sweeten, but I prefer the raw honey. Sometimes I add

ground cinnamon too. I just put all of the ingredients in my new

Vitamix and voila you have wonderful raw eggnog for all occasions!

P.S. I have served this to guests, even children (with permission of

their parents). I would NEVER give this to anyone who doesn't know

that the ingredients are raw. One other comment on this subject...I

have known people who have tried my raw milk to experience excess gas

at first (I attribute this to their systems reacting to the new good

bacteria). You might mention this to anyone trying it so that they are

not alarmed if this occurs. I always wash my hands before starting,

use impeccably clean utensils and clean technique. I would only keep

the eggnog for up to 2 days in the refrigerator. (It probably won't

last that long anyway!

Kimi brought up a very important thought in her message!

During the Holiday season, we may consume foods that may or may not agree with

us. We are also exposed to all kinds of bugs and viruses going around, and many

times deal with the unpleasant side effect of those. In some cases we feel the

need to visit a Medical Doctor for treatment.

If this should happen to you, or anyone that you serve raw dairy products to,

please consider for a moment the problems other farmers (like us) in California,

Indiana and Michigan are dealing with, all because one person admitted to their

MD that they drank raw milk. The MD immediately contacts the local Health

Department, who in turn contacts the local Department of Trade and Consumer

Protection (DATCP). They in turn launch an all out investigation, and shut down

the farmer who supposedly supplied tainted milk. Without fault in any of these

cases the blame was put on the farmer immediately and he/she was shut down.

If you must see an MD for what ever reason...please DO NOT tell them that you

consume raw dairy products. If you do, we raw milk providers will be forced to

face the tyranny and be shut down just like all the rest have.

This is vitally important folks. One little slip of the tongue can shut us down

completely, and this is exactly what they are waiting for to happen.
